“Kaiserschmarrn” with chocolate nougat sauce
Traditional Austrian dessert in an autumn version with caramelized apples

Kaiserschmarrn is one of Austria's most famous specialties. This popular dessert is basically a thick pancake that is torn into pieces after being flipped. We serve today's gourmet version with a delicious sauce made from our nougat filled chocolate Praliné Milk. Accompanied by a few caramelized apple slices, this recipe is perfect for fall and a real comfort food on cold, dreary days.
Ingredients
Serves 4
Für die karamellisierten Äpfel:
40 g
butter

apples, cut into slices
2 tbsp
cane sugar
1 tbsp
vodka
For the chocolate nougat sauce:
125 g
cream
2 tsp
cornstarch
100 g

For the Kaiserschmarrn:

cane sugar
200 ml
milk
150 g
flour

apple, cut into small pieces

butter (for frying)

For the caramelized apples, heat the butter in a pan. Add the apple slices, sugar, and vodka. Fry over medium heat until golden brown and set aside.

Melt the cream, cornflour and chocolate together in a bain-marie. Stir regularly until you have a smooth sauce.

Separate the eggs. Beat the egg whites in a bowl until stiff.

In another bowl, mix the egg yolks with sugar, flour and milk to form a smooth batter. Fold in the apple pieces and finally carefully fold in the beaten egg whites with a spatula.

Now heat the butter in a frying pan over medium heat, pour in the batter and bake the underside until golden brown. Then flip the Kaiserschmarrn, tear it into pieces with a spatula and fry through.

Serve the Kaiserschmarrn warm with the caramelised apples and chocolate nougat sauce.
