Easter cake with dark chocolate chips and white chocolate sauce

Special ingredients transform this carrot cake into a luxurious take on the classic Easter cake. Two types of chocolate make the cake particularly appealing to chocolate lovers: the batter contains chunks of VIVANI’s Dark Cooking Chocolate, and the glaze is made from a white chocolate sauce. To ensure the Decadent Carrot Cake is extra moist, the raw grated carrots are steamed beforehand. Alongside ground almonds, poppy seeds further enrich the multi-layered flavour experience. The cake, which is very quick and easy to make, is decorated with little marzipan carrots, making it a wonderful addition to any Easter coffee table.
Ingredients
For a springform tin with Ø 24–26 cm
For the dough:
250 g
carrots
150 g
sugar
120 ml
vegetable oil
2
eggs
1 tsp
vanilla extract (optional)
50 g
poppy seeds
50 g
ground almonds
80 g
VIVANI Dark Cooking Chocolate, chopped

For the chocolate sauce:
80 g
VIVANI White Cooking Chocolate, chopped
100 g
cream
For the decoration:
VIVANI White Cooking Chocolate, grated

Cut the carrots into pieces or grate them, then steam them and finally purée them until smooth. Leave to cool.

Mix together the sugar, oil, eggs and vanilla extract, then stir in the carrot purée. Fold in the almonds, poppy seeds and chopped dark cooking chocolate. Then mix the flour and baking powder together and stir into the dough.

Grease a springform tin or line it with baking paper. Pour in the batter and bake at 180 °C for about 35–40 minutes (test with a skewer). Then leave to cool completely.

Meanwhile, heat the cream for the sauce. Pour over the chopped white chocolate and leave to stand for a few minutes. Then stir, until the chocolate has completely melted and a homogeneous mixture has formed.

Spread the sauce over the cake and decorate with marzipan carrots. Finally, sprinkle with grated white chocolate coating. Serve the individual slices of cake with a little extra sauce.
