Chocolate tart – who can resist? This classic French dessert is transformed into an intense chocolate experience with a generous helping of VIVANI Dark Cooking Chocolate with 70% cocoa content. As a special finishing touch, our elegant and festive tart is crowned with a crispy meringue topping. The light and airy beaten egg whites are baked at a low temperature to form a crispy topping that doesn't collapse after baking thanks to a dash of vinegar in the mixture. The baking process takes a little longer than usual, but the result is all the more worthwhile.
Ingredients
For a springform pan with Ø 24 cm
For the dough:
225 g
VIVANI Dark Cooking Chocolate
200 g
butter
200 g
sugar

Large eggs, beaten
1 tsp
Vanilla extract
150 g
flour
1 tsp
baking powder
For the meringue:
100 g
icing sugar, sifted
3
egg whites
0.5 tsp
white wine vinegar

Preheat the oven to 180 °C. Melt the chocolate and butter in a bain-marie over a low heat.

Mix the sugar and eggs in a bowl and add the vanilla extract. Add the melted butter and chocolate mixture and stir. Mix the flour and baking powder and add to the liquid mixture spoonful by spoonful until everything is mixed together.

Grease the springform pan, pour in the batter and smooth it out. Bake in the preheated oven for 25 minutes. Then remove and allow to cool briefly. Reduce the oven temperature to 160 °C.

In the meantime, beat the egg whites with a hand mixer until stiff. While beating, slowly sprinkle in the sifted icing sugar and then add the vinegar.

Spread the beaten egg whites on the slightly cooled base and then bake for another 30-40 minutes. Keep checking to make sure the meringue doesn't get too dark.
