Mallorcan Chocolate Almond Cake
Traditional cake meets salty VIVANI chocolate

Our Chocolate Journey 2024 takes us to warm summery Spain in June, more precisely to the popular Balearic island of Mallorca. This is where the Mallorcan almond cake "Gató de almendra" comes from - an irresistible delicacy from the island, which is famous for its almond cultivation. A special feature of the cake is that it is made completely without any flour or raising agents. Only beaten egg whites and ground almonds create the fluffy texture. We also refine the cake with salty VIVANI chocolate, almond paste and the gourmet salt "Flor de Sal d'Es Trenc "*, which is extracted directly on Mallorca.
Ingredients
For 1 springform tin
For the cake:

coconut blossom sugar
80 g
VIVANI Dark Mallorca Fleur de Sel Chocolate
6 tbsp
olive oil
2 tbsp
almond paste

vanilla pod
1 pinch
Flor de Sal d’Es Trenc Natural*

Separate the eggs and beat the egg whites with a pinch of salt until stiff. Slowly add the sugar and continue beating until it has dissolved.

Cut the vanilla pod in half lengthways and scrape out the seeds with a sharp knife.

Beat the egg yolks until creamy. Add the olive oil, almond butter and vanilla pulp and mix well. Fold in the ground almonds and mix everything until smooth. Depending on the size of the eggs, you may need to add a little milk to prevent the mixture from becoming too firm.

Now roughly chop the chocolate and fold into the almond mixture together with the beaten egg whites.

Pour into a greased springform tin and bake in a preheated oven at 180 °C for about 35 minutes.

Sprinkle the still slightly warm cake with some grated chocolate and coarse salt flakes. Drizzle with a little almond butter before serving.
* The gourmet salt “Flor de Sal d’Es Trenc” is extracted on the beautiful Mallorcan natural beach Playa d’Es Trenc. In the salines, the natural salt crystallises into beautiful salt flowers under the influence of the sun and wind. The salt produced here has been known since the ancient world for its Mediterranean flavour and particularly mild taste. It also contains over 80 minerals and micronutrients.
