Our Chocolate Journey 2024 tour continues and takes us to Japan in September. Here's a recipe for delicious mochi for you. Never heard of them? Mochi are traditional small rice cakes in the shape of a ball, available with many fillings. Traditionally eaten at New Year, they have now become a real trend and are popular as a dessert or snack at any time. The soft balls are made from glutinous rice flour and do not need to be baked. We fill them with a delicious chocolate-hazelnut ganache made with our strong Fine Dark 85% Cocoa.
Ingredients
For 12 mochi
For the mochi:
115 g
glutinous rice flour
60 g
sugar
170 ml
water
For the chocolate-hazelnut filling:
60 g
VIVANI Fine Dark 85 % Cocoa Chocolate, finely chopped
30 ml
milk
1 tbsp
butter
2 tbsp
sugar
50 g
ground hazelnuts
1 tsp
peanut butter
Also:
cornflour

Firstly, prepare the filling. Place the chocolate and sugar in a bowl. Heat the milk and butter and pour over the mixture. Leave to stand for a few minutes, then stir the mixture well until you have a glossy ganache.

Add the peanut butter and hazelnuts and stir well. Place in the fridge for 3 hours until the mixture is firm.

Meanwhile, mix all the mochi ingredients in a pan until smooth. Heat over a medium heat and stir until lumps form. When the batter becomes thick and almost translucent, it is ready.

Remove the mochi mixture from the heat and leave to cool briefly on a chopping board dusted with cornflour.

Now form 12 balls from the firm chocolate-hazelnut mixture.

Cut the cooled mochi mixture into 12 equal-sized pieces on the chopping board. Shape each piece into a circle and fill with a chocolate-hazelnut ball. Carefully seal the mochi into smooth balls and serve on a plate dusted with cornflour.
