Sweet spring rolls differ from the savoury starters and snacks found in Asian cuisine. Instead of vegetables and other ingredients, this simple but sophisticated recipe involves wrapping high-percentage dark chocolate (85% cocoa) and banana pieces in soaked rice paper and then deep-frying them. The recipe works well with the low sugar content of the chocolate. If you prefer it a little sweeter, you can sprinkle the filling with a little brown sugar. Served with unsweetened cream, banana pieces and chocolate chips, this recipe is a quick, low-sugar dessert that is perfect for many occasions.

RECIPE: SWEET SPRING ROLLS

Peel and slice the bananas. Roughly chop the chocolate and set aside.

Briefly soak a rice paper sheet in cold water until it is soft and flexible.

Place a few pieces of banana and some chopped chocolate in the centre of the paper. Sprinkle with a little brown sugar if desired. Fold in the sides and roll up the rice paper.

Repeat the steps until all the ingredients are used up.

Fry the spring rolls in hot oil for 1-2 minutes until crispy.

Garnish the rolls with whipped cream, banana pieces and chopped chocolate as desired and serve warm.
