Whilst dark chocolate varieties are currently all the rage thanks to their health benefits and high-quality image, milk chocolate is often seen as a ‘less desirable’ treat. Is this unfair? A brief defence of the sweeter side of the world of chocolate.

Anyone who takes a closer interest in chocolate will, sooner or later, often come across high cocoa contents: 70 per cent, 85 per cent, 92 per cent, 100 per cent. And indeed, here at VIVANI, we love the fascinating variety of dark chocolates. They tell stories of origin, cocoa and pure, unadulterated character.

6 things many people don’t know about milk chocolate

  • Milk chocolate is the undisputed crowd favourite. No other type of chocolate is bought more frequently worldwide.
  • Although many people consider Switzerland to be the inventor of milk chocolate, current research suggests that the first recipe dates back to 1839 – created by the Dresden-based chocolate company Jordan & Timaeus, who are said to have produced a chocolate using donkey’s milk.
  • Even mild chocolate is full of flavour. Over 600 flavour compounds have been identified in cocoa. The taste is determined not only by the cocoa content, but also by its origin, fermentation and roasting.
  • High-quality chocolate melts almost at body temperature. Cocoa butter ensures that it develops its characteristic creamy melt right on the tongue.
  • White chocolate contains real cocoa. It is made from cocoa butter – the finest part of the cocoa bean.
  • Milk chocolate is remarkably diverse. From classically creamy to intensely cocoa-flavoured, with spices, coffee or fruit: the range of high-quality milk chocolates is wider today than ever before.

Chocolate has to suit the occasion

Perhaps that is precisely the finest quality of good chocolate: it defies categorisation. Sometimes it is the intense richness of a 92 per cent dark chocolate bar that we are looking for. Other times, however, it’s the creamy lightness of white chocolate that, for a brief moment, reminds us of a holiday in Italy, our favourite dessert or the aroma of a freshly brewed espresso.
