swirl brownies | Recipe

With subtle notes of orange and cinnamon

The classic pumpkin pie is mainly known in the USA as a tart, which is filled with pumpkin and various spices such as cinnamon, ginger and nutmeg. However, the popular autumn vegetable is also delicious in combination with strong dark chocolate and aromatic orange. Our pumpkin chocolate swirl brownies, in which we swirl together two different coloured batters, look like beautifully glowing autumn leaves. Easy to make, vegan and with a big wow effect.

Ingredients

For 6-8 brownies / a 20x25 cm baking tin


700 g

Hokkaido pumpkin (deseeded)

1.5 tbsp

liquid coconut oil

4 tbsp

agave syrup or rice syrup

2 tsp

cinnamon

1 tsp

turmeric

30 g

cornflour

200 g

white spelt flour

3 tbsp

light-coloured almond butter or peanut butter

Wash, deseed and dice the pumpkin. Mix with the coconut oil and spread on a baking tray lined with baking paper. Bake in a preheated oven at 200°C fan oven for 15-17 minutes until soft.

Leave the pumpkin pieces to cool briefly and then puree in a blender with the agave syrup, cinnamon, turmeric and cornflour until smooth.

Sieve the flour into a bowl, add the pumpkin puree, almond butter and the zest of half an orange and the juice of a whole orange (approx. 80 ml) and mix into a smooth batter.

Remove about 1/3 of the batter and set aside.

Carefully melt the chocolate in a bain-marie and mix with the remaining 2/3 of the batter.

Spread the chocolate batter into the baking tin lined with baking paper, reserving approx. 3 tbsp. Spread the light-coloured pumpkin layer on top. Then spread the rest of the chocolate batter in dots on top and swirl into a spiral shape with a fork.

Bake the cake in the oven at 180°C fan oven for around 25 minutes. Leave to cool briefly and then cut into brownie squares.
