Light and crumbly short cakes with three types of chocolate coating

British scones are traditionally made with cold butter, flour, milk and baking powder. For our luxury version, the simple dough is refined with three types of cooking chocolate. The white, dark and milk cooking chocolate is worked into the dough in pieces, but is also melted together with cream to form a creamy ganache, which is used to garnish the scones. Their triangular shape makes the scones a real eye-catcher when served and reminds one of a piece of cake. They are particularly suitable for afternoon coffee or tea time and can be prepared very quickly without any waiting time.
Ingredients

For the dough:
250 g
flour

cold butter

cane sugar

Rub the butter and flour together with your hands in a bowl until the mixture resembles breadcrumbs.

Add the sugar, baking powder, egg and milk and knead into a compact but soft dough.

Roughly chop the three types of cooking chocolate and carefully knead into the dough.

Roll out the dough into a circle about 3 cm thick. Then divide into 8 to 10 ‘cake pieces’, but do not separate them.

Place the scone ‘cake’ in a round baking dish or cake tin lined with baking paper and brush with the beaten egg. Bake in a preheated oven at 200 °C top/bottom heat for about 15-20 minutes until golden brown.

Meanwhile, for the ganache, melt the cooking chocolate with the cream in a bain-marie, stirring constantly, until a creamy sauce is formed.

Allow the scones to cool briefly after baking. Cut the individual pieces again with a sharp knife and then decorate with the ganache. Sprinkle with sliced almonds and serve warm.
