This chocolate is a milestone in the organic sector because it consists of 100% cocoa fruit! It does not taste as bitter as bars with 100% cocoa content, as it contains 27% cocoa fruit flakes. These are obtained from cocoa pulp, which contains the beans. Only a part of this is required for the subsequent fermentation process (traditionally carried out in banana leaves). However, we use the surplus pulp to make cocoa fruit flakes. These give the chocolate a fruity, completely natural sweetness.

The production process for cocoa fruit flakes begins on the cocoa farms in Ghana. Here, the fresh cocoa fruit pulp is pressed using mobile, solar-powered equipment immediately after harvesting and is then further processed at a nearby factory. The subsequent drying process to produce the flakes takes place in Germany.

Thanks to the use of cocoa fruit flakes, our Whole Cocoa Fruit chocolate contains only the natural sweetness from the cocoa fruit pulp and no added granulated sugar. This ensures that valuable nutrients from the cocoa fruit itself are preserved.

Through its products, such as cocoa fruit juice and dried cocoa fruit flakes, the Koa company generates additional income for cocoa farmers, which is paid out on the very day of production. And the yield is impressive: up to 25 per cent of a cocoa fruit consists of what is known as fruit pulp. Some of this is needed for fermentation, but the surplus pulp can be put to further use. This allows a valuable resource to be harnessed for potential food products. By involving local people in Ghana – particularly young people – the initiative creates additional jobs and opportunities for sustainable growth in the region.
