Wintery and Christmassy dessert cake with pecans

Christmas is not far off and you are still missing a suitable dessert when putting together the festive menu? How about a dessert cake that is prepared with very little effort and bakes fresh in the oven while the guests are already seated at the table? We reinterpret the classic "baked apple" and let it sink into a wintery spiced chocolate batter together with crunchy pecans. Served lukewarm and with cream, our brownie baked apple cake is also a tempting idea in the afternoon and beyond the Christmas period.
Ingredients
For one baking tray
For the batter:
200 g
butter
200 g
VIVANI Milk Cooking Chocolate

raw cane sugar
100 g
white spelt flour
40 g
baking cocoa powder
1 pinch
salt
0.5 tsp
ground Ceylon cinnamon
For the topping:

organic orange (juice and a little zest)
1 tbsp
butter
0.5 tsp
ground Ceylon cinnamon
0.25 tsp
ground Bourbon vanilla
2 - 3 tbsp
maple syrup

Preheat the oven to 180 °C hot air. Cut the apples in half and place in a baking dish.

Melt the butter and drizzle over the apples. Mix the orange juice and a little orange zest with the cinnamon, vanilla and maple syrup. Spread over the apples as well. Leave to roast in the oven for about 20 minutes.

Meanwhile, coarsely chop the cooking chocolate for the batter and melt together with the butter in a bain-marie.

Beat the eggs with the sugar until creamy. Slowly stir in the chocolate butter.

Mix the flour with the cocoa powder, salt and cinnamon. Carefully fold into the chocolate mixture using a whisk.

Line a baking tray with baking paper and spread the brownie mixture evenly on it.

Leave the apple halves to cool slightly after roasting and reduce the oven temperature to 160 °C hot air.

Then spread the apples and pecans over the cake mixture. Bake for about 35 minutes. Leave to cool slightly and serve lukewarm.
Tip: The cake tastes delicious with a dollop of freshly whipped cream with a pinch of vanilla.
