Crystal sugar-free crunchy muesli with nuts, banana and dates

This granola is free from granulated sugar yet has a chocolatey flavour. The sweetness comes exclusively from ripe bananas and dried dates. The VIVANI Choc Drops are sugar-free and made from chocolate with 100 per cent cocoa content. The ingredients are mixed together and baked in the oven, giving the granola its characteristic crunchy texture. Once cooled, the Choc Drops are stirred in and the vegan granola can be transferred to a storage jar. This simple recipe also makes a lovely DIY gift for many occasions.
VIVANI Choc Drops: the perfect addition to this granola

VIVANI Choc Drops offer pure chocolate indulgence with no added sugar. These little coins are made from 100% of the finest organic dark cocoa from the Dominican Republic and are a miniature version of the popular Superior Dark 100% Cocoa + Nibs bar, but without the cocoa nibs. Thanks to their handy size, the Choc Drops are incredibly versatile – for example, as a garnish for elegant desserts, cakes, tarts or pralines. They can, of course, also be melted and used in liquid form just like classic cooking chocolate. But even on their own as a snack or in muesli – as in this granola – they offer sugar-free moments of indulgence. Thanks to their shape and size, they’re ideal for using whole in recipes.
RECIPE: CHOC DROPS GRANOLA
Ingredients
Makes 1 large storage jar containing approx. 700 g
250 g
fine rolled oats
130 g
mixed nuts and seeds (e.g. cashews, walnuts, hazelnuts, sunflower seeds)

ripe bananas (approx. 220 g)
40 g
dates, pitted
2 tsp
olive oil
40 g
tahini
1 tsp
organic vanilla extract
2 tsp
sugar-free (baking) cocoa
1 pinch
salt

Preheat the oven to 160 °C (top and bottom heat) and line a baking tray with baking paper.

Mash the bananas with a fork. Then mix in the oil, tahini, vanilla extract, (baking) cocoa and salt.

Mix the oats, nuts and seeds together in a large bowl. Chop the dates into small pieces and fold them in as well.

Now add the banana, oil and cocoa mixture and mix everything thoroughly until all the ingredients are evenly coated.

Spread the mixture loosely over the prepared baking tray and press down gently.

Bake in the oven for about 15 minutes, then turn it over and bake for a further 15 minutes until all the ingredients are evenly browned (the granola may be a little darker around the edges).

Leave the granola to cool completely before folding in the Choc Drops. Some of these can be left whole, whilst others can be roughly chopped.

Transfer the finished granola to a clean storage jar and decorate with a few extra Choc Drops as desired.
Alternatives & Tips
- Amount of dates: Depending on how ripe the bananas are, you can reduce or increase the amount of dates.
- Alternatives to dates: Dried apricots, figs or raisins add extra sweetness without granulated sugar and provide a bit of variety.
- Storage: The granola will stay fresh for around 2–3 weeks if stored in an airtight container.
- Gift idea: Packed in a pretty jar, this granola makes an excellent homemade gift.
