This hot chocolate with soy caramel sauce is an exceptional alternative to classic drinking chocolate. The combination of intense dark chocolate and a homemade sweet and salty caramel sauce with soy sauce creates a multi-layered taste experience. Perfect as a warming winter drink or for cosy evenings. The savoury umami note of the soy sauce enhances the sweetness of the caramel and harmonises perfectly with the strong cocoa notes of the dark organic chocolate. The recipe is easy to follow, ideal for special occasions and can also be easily adapted to be vegan.
Ingredients
Serves 4
For the soy caramel sauce:
200 g
cane sugar
160 g
cream
55 g
butter
40 g
soy sauce (classic, not sweet)
For the hot chocolate:
700 ml
milk
100 g
VIVANI Dark Cooking Chocolate, chopped
100 g
soy caramel sauce
For garnishing (optional):
(mini-)marshmallows

First, prepare the sauce. To do this, melt the sugar in a saucepan over low to medium heat until it caramelises and turns golden brown.

Add the butter and stir until it has completely melted. Then stir in the soy sauce and cream until the mixture is smooth. Remove from the heat and leave to cool for a few minutes.

In the meantime, heat the milk with the cooking chocolate and 100 g of the homemade soy caramel sauce in a saucepan. Heat, stirring constantly, until the chocolate has completely melted.

Now put 2 to 3 tablespoons of soy caramel sauce into each of four cups or glasses, fill with hot chocolate and stir briefly.

Garnish with a few marshmallows and some soy caramel sauce, if desired.
Tips & variations
- Vegan: Replace milk with oat or soy milk, cream with plant-based cream, butter with margarine.
- Intense flavour: Refine with a pinch of sea salt or a little cinnamon.
- Storage: The sauce makes more than needed. Excess sauce can be stored in an airtight container in the refrigerator for up to 7 days.
