Just two ingredients to chocolate heaven

Chocolate mousse should be light and creamy at the same time. But can you make a fantastic chocolate mousse with just two ingredients? You actually can. All you need is chocolate and water, and you can safely do without raw eggs. This makes the recipe vegan too. If you like it a little sweeter, you can add some sugar to the mousse. Incidentally, the idea comes from French chemist Hervé This, who is considered one of the fathers of molecular cuisine.
Ingredients

VIVANI Fine Dank Chocolate
240 ml
water
4 tsp
sugar (optional)

Break the chocolate into pieces and melt it in a saucepan with the water.

Meanwhile, fill a bowl with ice cubes and place a smaller bowl inside it, similar to a bain-marie. When the chocolate has melted, pour the mixture into the smaller bowl.

If you like your mousse a little sweeter, you can add 4 teaspoons of sugar to the mixture.

Now beat with an electric hand mixer until the mixture becomes firm. If the chocolate becomes grainy, it has been beaten for too long. In this case, simply reheat everything in the saucepan and repeat the process.

Pour the finished mousse into small glasses or other pretty moulds and chill until ready to serve.
