Traditional Austrian vanilla crescent cookies for Christmas

"Vanillekipferl" are a classic Austrian Christmas biscuit, recognisable by their typical long and curved shape, reminiscent of a crescent. Traditional "Vanillekipferl" are made from shortcrust pastry with ground almonds and flavoured with vanilla pulp. We give this classic a chocolate twist by dipping the hand-shaped crescent cookies in liquid milk cooking chocolate. Finally, they are sprinkled with chopped pistachios.
Ingredients
For 25 vanilla crescent cookies
Für die Kipferl:
150 g
cold butter
200 g
flour
50 g
icing sugar
70 g
ground almonds
8 g
vanilla sugar or 1 tsp ground vanilla
For the coating:
150 g
VIVANI milk cooking chocolate
30 g
chopped pistachios

Knead the cold butter in small pieces with the flour, icing sugar, ground almonds and vanilla sugar (or ground vanilla) briefly to form a smooth dough.

Cover the dough and leave to rest in the fridge for at least 30 minutes.

Preheat the oven to 175 °C top/bottom heat.

Divide the dough into 25 equal pieces. Roll each portion into a ball and then shape into crescents.

Place the crescents on a baking tray lined with baking paper and bake for 10–12 minutes until the tips are lightly golden. Then leave to cool completely.

In the meantime, roughly chop the chocolate coating and melt carefully in a bain-marie.

Dip half of each crescent into the melted chocolate, allow to drip off and then sprinkle with the chopped pistachios. Place on baking paper and allow to set completely.
