Apple crumble with chocolate | Recipe
Sweetened only with dates, vegan and from the pan

Fruit crumble is a popular and quick dessert from British-American cuisine. Many types of fruit are suitable, such as apples, which are cut into pieces, mixed with buttery crumble topping and baked in the oven. The fruit bake is served warm with ice cream or vanilla sauce. Our vegan version is free from granulated sugar and is only gently sweetened with dates. The chocolate chips used also contain no sugar, but a full 100% cocoa and additional crunchy cocoa nibs. This, together with lots of cashew nuts, adds an extra crunch. Especially delicious with plant-based Greek yoghurt.
Ingredients

For the apple layer:
750 g
tart apples, diced

Medjool dates, finely chopped
120 ml
water
1 tsp
vanilla extract
For the crumble layer:
80 g
ground almonds
50 g
wholemeal spelt flour
25 g
vegan butter

Medjool dates, finely chopped
a little
hot water
30 g
cashew nuts, lightly roasted
20 g

For garnishing (as desired):

Place the diced apples, 3 chopped dates, water and vanilla extract in a small saucepan.

Simmer over medium heat until the apples are soft. Allow to cool slightly.

For the crumble layer, rub the vegan butter into the ground almonds and wholemeal spelt flour with your fingers until the mixture resembles breadcrumbs.

Now place the 2 chopped dates in a small bowl and pour enough hot water over to cover them. Leave to soak.

In a pan over medium heat, stir the crumbly mixture regularly until it is golden brown. Add the soaked dates and water and continue cooking for a few minutes. Then stir in the cashews.

To assemble the layers, place the apple mixture in a suitable dish and sprinkle the chopped chocolate on top. Add the crumble layer and sprinkle with additional cashews and chocolate as desired.

Serve with a tablespoon of vegan yoghurt and extra chocolate as desired.
