vegan Christmas variation of a classic Italian dessert

Every year, the question of the perfect dessert for the Christmas menu comes up again. Our answer is a variation of the popular Italian panna cotta ("cooked cream"), which today has been spruced up for Christmas with chocolate, orange and typical spices. Instead of cream, we use coconut and almond milk. In addition, we replace the gelatine with agar agar. The result is a completely vegan delicacy that will appeal to fans of orange chocolate in particular.
Ingredients
For 3 servings
For the panna cotta:
80 g
VIVANI Fine Dark Orange Chocolate
200 ml
coconut milk
75 ml
almond milk
1 tbsp
coconut blossom sugar
0.25 tsp
vanilla pulp
1 level tsp (1 g)
agar agar
For the sauce:

organic oranges
1 tbsp
coconut blossom sugar
1 pinch
ground cinnamon
1 pinch
ground clove
1 pinch
ground cardamom
For the decoration:
20 g

For the panna cotta, first finely chop the chocolate.

Mix the coconut milk, almond milk, coconut blossom sugar, vanilla pulp and agar agar in a small saucepan and bring to the boil, stirring constantly. Reduce the heat and simmer for 1-2 minutes.

Remove the pan from the heat and add the chocolate. Melt while stirring until a homogeneous mass is formed. Pour into 3 dessert glasses and cover. Leave to set in the fridge for about 4 hours.

In the meantime, prepare the decoration. Melt the remaining chocolate in a bain-marie. Fill into a piping bag and pipe 3 small fir trees onto baking paper. Leave to set in the fridge.

Prepare the sauce also during the cooling time. Wash an orange in hot water, dry it and finely grate the zest. Squeeze out the juice. Peel the second orange so that the white skin is completely removed. Cut into 6 thin slices with a sharp knife.

Place the coconut blossom sugar in a pan and melt over a high heat without stirring. As soon as it dissolves, stir carefully and deglaze with orange juice. Add the spices and orange zest, stirring, and simmer briefly until the sugar has completely dissolved again.

Add the orange slices to the sauce and continue to simmer for 1 minute. Turn off the heat and turn the oranges once more. Then pour the sauce onto a plate, cover and leave in the fridge until ready to serve.

After the cooling time, arrange 3 desserts. Place 2 orange slices and some sauce on each dessert plate. Carefully remove the panna cotta from the glasses: Place glasses briefly in a container of warm water and then loosen all around with a sharp knife.

Turn out 1 panna cotta onto the fruit. Place the solidified chocolate fir tree on top for decoration. Serve immediately.
