Sandwich cookies filled with VIVANI's "Fine Dark Milk" chocolate and peanut butter

Our festive Linzer Augen cookies are the perfect choice for anyone who loves classic cookies but fancies a sophisticated, chocolatey and nutty twist. Instead of the jam, this traditional Austrian biscuit now features creamy peanut butter and melt-in-the-mouth VIVANI ‘Fine Dark Milk’ chocolate – a full-bodied organic chocolate with 50% cocoa, which gives the biscuits a caramel-like sweetness thanks to coconut blossom sugar.
Ingredients
For about 30 sandwich cookies
For the shortcrust pastry:
300 g
flour
100 g
icing sugar
40 g
VIVANI Fine Cocoa Powder
200 g
cold butter
1
egg yolk
For the filling and decoration:
80 g
VIVANI Fine Dark Milk 50 % Cocoa Chocolate
Peanut butter (as needed)
Chopped peanuts (unsalted)

For the shortcrust pastry, place the flour, icing sugar and cocoa powder on the work surface. Cut the cold butter into pieces, add to the mixture and work in.

Add the egg yolk and knead everything into a smooth dough. Then shape into a ball, cover and leave to rest in the fridge for at least 30 minutes.

Roll out the dough between two sheets of baking paper to a thickness of 3 mm and cut out about 30 tops with holes and 30 bottoms without holes using a Linzer Augen cookie cutter.

Bake the cookies in a preheated oven at 180 °C for about 10 to 15 minutes and then leave to cool completely.

In the meantime, carefully melt the chocolate in a bain-marie.

Now spread each bottom part of the"Linzer Augen" first with a teaspoon of peanut butter and then with a teaspoon of melted chocolate. Then place the top parts with the holes on top and press down lightly.

Decorate the "Linzer Augen" with the rest of the melted chocolate, sprinkle with chopped peanuts and leave to set.
