DIY idea for a delicious little Christmas gift

Something homemade with love is often the best gift. If you want to surprise others with a delicious treat during Advent or Christmas, you can give them sweet joy with our chocolate speculoos spread. The cashew-based chocolate cream is quick to make with delicious spiced speculoos cookies. A powerful blender is an important tool, but the recipe can also be prepared with a hand blender (see tips).
Ingredients
For 2 glasses, approx. 200 ml each

cashews
100 ml
cold water
60 g
sugar
65 g
spiced speculoos cookies
75 g
VIVANI Dark Cooking Chocolate

VIVANI Milk Cooking Chocolate
25 g
sunflower oil (optional)

Cover the cashews with water in a small saucepan and cook over low heat for 10–15 minutes until soft. Then strain and drain.

02 Place the cashews in a high-speed blender while still hot. Add 100 ml cold water, sugar, both types of cooking chocolate (broken into pieces), spiced speculoos cookies (broken into pieces) and – optionally – the sunflower oil.

Blend everything until smooth and creamy.

Pour into clean screw-top jars and seal immediately.
Tips
Shelf life:
• The spread can be kept for up to 4 weeks.
• For longer shelf life, boil the filled, tightly sealed jars in hot water for approx. 10 minutes.
• Once opened, store in the refrigerator and consume within one week.
Variation without a high-speed blender:
The recipe also works with a hand blender. For this variation, melt the cooking chocolate in a bain-marie, grind the spiced speculoos cookies as finely as possible and cook the cashews until very soft. Add the water to the mixture gradually rather than all at once to prevent the hand blender from blocking. The preparation takes a little longer and the consistency may be slightly less creamy, but this does not affect the taste.
